3 large lemons
1 cup water 1/2 teaspoon agar 1/2 teaspoon stevioside or
4 teaspoons stevia blend or 8 packets
With a vegetable peeler, remove zest in long pieces from lemons. Squeeze 1/2 cup of juice from lemons and set aside.
In a heavy saucepan, heat water, agar and stevia, stirring until stevia is dissolved. Stir in zest and transfer syrup to a bowl to cool. Chill syrup, covered, until cold. Discard zest and stir in lemon juice.
Pour mixture into ice cream maker and follow manufacturer's instructions. Serve 1/2 cup in small dessert bowls garnished with a slice of lemon.
